This is one of our favorite recipes for Brussels sprouts. It’s a great side dish for family gatherings, potlucks, or any night of the week!
1 1/2 pounds or so of Brussels sprouts, halved*
1/4 C olive oil
Preheat oven to 400*F. Toss the sprouts with the olive oil, salt, and a tablespoon or two of balsamic vinegar. Spread in a single layer on a rimmed sheet pan and roast for 20-30 minutes, or until tender and browned. For even more kick, drizzle just a little more balsamic vinegar over the cooked sprouts and toss again before serving. Yum!
