Recipes from a Farmer’s Table – COOKIES!

This month, since we are highlighting sugar, we are brining you our favorite  recipes using sugar!  Actually, it has been hard just choosing the few we’re posting here.  They’re all delicious and proven.  Enjoy!

MOM’S BUTTER COOKIES
from Robin’s mom, Margie – our family’s favorite

Preheat oven to 350*.
Spray cooking spray or grease a 9″ x 13″ pan.

3/4 Cup granulated sugar
1 Tbsp. Karo syrup
1/2 lb. butter
1 tsp. vanilla (or try almond, to switch it up)
1 egg yolk (reserve the white)
1/4 tsp. salt
2 Cups sifted flour
slivered or sliced almonds

Cream together the first 6 ingredients, and then blend with the flour.  Dough will be stiff.  Press evenly in the pan.  Then, beat the egg white until foamy, spread this over the top of the dough with a pastry brush.  Sprinkle with almonds.  Bake for 25 minutes, or until just golden.  Cool on a rack, then cut into bars.  During the Christmas season, you can press red and green maraschino cherries into the cookies while still warm.

COCONUT HOMESTEAD COOKIES

you might as well double the batch

Preheat oven to 375*

1 Cup flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 Cup butter – softened
1/2 Cup granulated sugar
1/2 Cup brown sugar
1 egg
1 tsp. vanilla
1/2 Cup quick oats
1 Cup apples, chopped and peeled
2 Cups coconut

Sift together flour, baking powder & soda and salt; set aside.  Beat butter and add sugars slowly until light and fluffy.  Blend in egg and vanilla.   Slowly blend the flour mixture into the butter mixture.  Add oats, apple and 1-1/2 Cup coconut.  Drop from teaspoonfuls onto ungreased baking sheets.  Sprinkle each cookie with a bit of coconut.  Bake for about 10 minutes.  Makes 4 dozen.

For JUMBO cookies, use 1/4 Cup dough for each cookie.  Flatten slightly, and bake for 15 minutes.

ALMOND BARS

Preheat oven to 325*
Grease a 9″x13″ pan

1 Cup butter, softened
1 Cup almond paste* (find this in the baking section)

2 Cups granulated sugar
2 eggs
1/2 tsp. salt
2 Cups flour
1/2 Cup sliced or slivered almonds

Cream together butter and almond paste.  Add the sugar, eggs, flour and salt.  Press into the pan with your fingers, and sprinkle with nuts.  Bake approximately 45 minutes, till just beginning to golden.

*You can soften the almond paste in the microwave,  just as you would butter
