This soup is a family favorite, is very hearty, and has tons of flavor. We make it all fall and winter long, with lentils grown on our own farm! Can’t beat the taste of something you produced yourself! While you might raise an eyebrow at the inclusion of the hot dogs, they are what give this soup snap! Plus, they make it kid-friendly.
You can either make this soup in a large stock pot or crock pot. If using a stock pot, it takes 4-5 hours to simmer, a crock pot, if started in the morning, will have ready soup by dinner time. You can double or triple this recipe, and freeze batches, it freezes great!
Needed: stockpot, mixing bowl, collander, knife, mixing spoon, measuring cup and spoons, garlic press
Ingredients, all laid out
2 C. dry lentils
2½ qt. water
2 tsp. chicken or beef bullion
1½ tsp. salt
¼ tsp. pepper
1 bay leaf
2 whole cloves
Dash of cayenne
1 ham bone or 1 lb. ham hocks
¼ C. butter
1 lg. carrot, chopped
1 lg. onion, chopped
¾ C. celery, chopped
1 clove garlic, pressed
6-8 hotdogs, sliced
Garnish with fresh parsley and parmesan
Chopped vegetables all ready to be sauteed
Melt butter in a large stock pot, add vegetables and saute till softened.
Put lentils in a large mixing bowl, run water into the bowl,

filling it and letting it overflow. Gently stir the water and lentils, to bring up chaff, and let run off.
Rinse the lentils again in a colander
Dump everything into pot
Dump everything (except hot dogs and garnishes) into the pot with the vegetables, and slowly bring to a boil.
Once it boils, turn the heat down and simmer for several hours, covered, stirring every so often. The lentils will soften, the meat will begin to fall off the bone, and the whole thing will look creamy-ish.
Meat from the ham hocks in one pile, scraps for the dogs in another!
Remove the ham bone from the soup, and let cool just a bit on a cutting board. With sharp boning knife, remove meat from gristle and fat and bone. Add the meat back to the soup and give the bone and gristle to the dog! Stir the meat into the soup, add sliced hot dogs.

Let simmer gently for another 10-15 minutes, while you’re making a salad and slicing crusty bread. Then it’s ready to serve. Garnish with parsley and Parmesan.
You may put this into the crock pot in the morning on high for 1 hour, then set to low for the whole day. 2 hours before serving, add hot dogs, and simmer.
